So I got a pair of canon heritages. Right now I'm on spruce edge flyers which are quite skinny. Am I going to need to change my technique for the canon's becuase of the fat-ness of it?

your technique will change itself.

i had similar experience when i changed from salomons to heritage. you will fel a lot more stable, dont be afraid to push you limits, ride you tails, and take deep high speed carves.
