IMHO both are acceptable. I'm sure they started out being "sole plates" because they're on the sole of a skate, but then some person either got confused or decided to be innovative and thus they've also become known as soul plates.

but soul was indeed derived from the more logical word sole.

The only flaw in that reasoning is that "soul" tricks were originally the more logical sole tricks most likely. Although because the origens of exactly where they came from are hazy, it's likely that no one knows for sure wether the change from sole to soul started out as creativity or a lack of intelligence. So by all means, feel free to call them whatever you want, there's just no one specific correct term for them, kinda like switch/fakie/backwards on skiboards. (I say on skiboards because in some other sports they're more defined)
